I always wondered what I could make with all that rhubarb. After I found this Rhubarb Candy recipe I am now looking for more rhubarb. Both sweet and sour rhubarb candy is the perfect summertime treat. This is so easy to make! Follow the recipe below to have a fresh summer treat that the whole family can enjoy.
Rhubarb Candy
Ingredients
4-5 rhubarb stalks, fresh
2 cups filtered water cup sugar
1-2 cups sugar (depending on taste)
1 teaspoon pure vanilla extract (optional)
Directions
Add sugar and water (and vanilla) to a sauce pan. Simmer and stir until sugar has dissolved.
Wash rhubarb stalks and cut to 6 inch long pieces.
With a peeler or mandolin make long strips of the 6 inch rhubarb stalks.
Soak rhubarb strips in the simple syrup in the sauce pan. Soak until the rhubarb strips have softened. If they are mushy that is too long.
Place strips on the dehydrator trays and dehydrate on the lowest setting. Check after 2 hours. Strips should be firm and fairly dry to be done. Do taste tests to see what you like the best.
